Chicken Diablo

2 tbsp. Vegetable oil2.5 lbs. Chicken Breast (skinless)1/2 tsp. garlic salt8 oz. package sliced mushrooms2 tbsp. tomato paste10 oz. can Rotel Diced Tomatoes and Green Chiles, undrained8 oz. can Rotel Tomato and Green Chile SauceBlack Pepper to taste
Heat oil in skillet over medium high heat, sprinkle with garlic salt and pepper.
Cook chicken until browned on each side, remove and set aside.
Add mushrooms to skillet, cook 2-3 minutes or until tender.
Add tomato paste, sauce and Rotel.
Return chicken to skillet, reduce heat and simmer until chicken is no longer pink in the center and sauce has thickened.
Can serve with rice or pasta if desired.
