4 6-ounce cans tuna 2 teaspoons Dijon mustard 1/4 c bob's red mill gf all purpose flour 2 Tbsp chopped fresh parsley 2 Tbsp chopped fresh chives, green onions, or shallots Sea salt and freshly ground black pepper A couple squirts of Tabasco 1 egg 1 pat of unsalted butter 2 Tbsp olive oil
In a large bowl, mix together the tuna, mustard, g.f. flour, parsley, chives, Tabasco, salt and freshly ground black pepper. Mix in the egg and butter.
Heat oil in a large skillet. Scoop tuna mix into skillet to form patties. Flip and cook until both sides are golden.
Serving Size: makes 8-10 patties
