Sweet and Sour Crockpot Pork Tenderloin

Ingredients
1lb pork tenderloin5 small carrots1 red bell pepper1 yellow bell pepper1 small sweet onion1 can of pineapple chunks with juice3 tbsp soy¼ cup brown sugar3 tbsp vinegar1 tbsp gingerPepper to taste¼ cup chicken broth
Directions
Take your Pork tenderloin and remove any excess fat from it. Once all the excess fat is removed cut the tenderloin into 1" thick strips, and then cut those strips into cubes.

Take your bell peppers, seed them, and cut them into strips.

Take your sweet onions and dice it. When you have peeled the carrots cut them with a diagonal cut.

Place all of the vegetables into the crockpot with the pork. Open the can of pineapple chunks and pour the contents (including the juice) into the crockpot.

Add the ginger, brown sugar, soy, vinegar, chicken broth, and pepper to the crockpot and give everything a good stir. Cover the crockpot and cook on high for 3 to 4 hours or on low for 6 to 8 hours.

Serve the sweet and sour pork over a bed of white rice
