3 cooked chicken breasts, shredded2 C Hominy2 14.5 oz cans Diced Tomatoes with green chilies8 C 99% Fat Free Chicken Stock1/2 Large Onion, cut into thin half circles or diced1 Tbsp Olive Oil1/4-1/2 Tsp of crushed red pepperSalt to taste
Saute onions in oil until transluscent.
Add all ingredients and let simmer for 20 minutes.
