Spicy Chicken Enchiladas

2 Skinless, Boneless chicken breast1/2 C. Chopped Onion1/4 tsp Salt1/4 tsp Dried Oregano leaves1/8 tsp pepper1/2 C. Shredded Monterey Jack cheese1/2 C. sour cream2 Tbsp. Chopped green chiles1 (10) oz Enchilada sauce4 (8") Flour tortillas1/2 C. Shredded cheddar cheese1/2 C. chopped lettuce
Heat oven to 350. Spray 8" square baking dish with nonstick cooking spray. In skillet cook chicken until cooked through. Add onion, salt, oregano, and pepper. Simmer for 3 min. Remove from heat and cool for 5 min.
Stir in Monterey jack cheese, sour cream, and chiles.
Spread 1/2 C. enchilada sauce in bottom of baking dish. Soon 1/4 of chicken mixture down center of each tortilla. Roll and place sem side down in dish. Spoon remaining enchilada sauce over top. Cover with foil.
Bake at 350 for 30-40 minutes. Uncover, sprikle with cheddar cheese. Bake an additional 4-5 minutes or until cheese is melted. Sprinkle with lettuce and tomato to serve.
