Light Cauliflower Mock Potato Salad

1 head cauliflower3 hard-boiled eggs1 pickle (or pickle relish)1/2 onion3/8 cup (6 TBSP) light mayonnaise1 TBSP mustard0.5 tsp celery seed0.5 tsp garlic powder0.5 tsp paprikasalt and pepper to taste
Chop cauliflower into bite-size pieces. Put in a large, microwave-safe container. Fill the container part of the way with water. Cover with saran wrap. Microwave for three minutes.
Dice one pickle and half an onion. Hard boil three eggs. Remove the yolks from two of the eggs, then dice the remaining whites and yolk.
Measure and combine all ingredients.
Chill for at least an hour.
