Kel's Low-Carb Chicken Lasagne

Ingredients
430gms ground chicken, lean200gms zucchini, cut into thin lengths100gms tomatoes, chopped (or drained tin)1 small onion, diced1-2 cloves garlic, crushed and dicedfresh thymefresh basil leaves, 5ground black pepper1 tsp chicken stock (or 1 chicken stock cube)2 tbsps parmesan cheese, grated finely1 tsp/spray of olive oil
Directions
1. Pre-heat oven to 180-190C; then lightly saute onion and garlic in frypan (sprayed with olive oil).

2. Brown off chicken mince.

3. Add tomatoes, herbs and seasonings. Cook all together until chicken cooked through.

4. In a non stick baking dish, layer chicken mixture with zucchini strips until the top layer of zucchini.

5. Sprinkle finely grated parmesan cheese on top and bake for 40 mins (until lasagne is browned on top, and bubbling).
