Potato, Leek, & Tomato Soup

Ingredients
2 large potatoes, peeled and diced into 1/2" squares2 quarts (8 cups) watersalt3 leeks, sliced, greens included3 TBSP olive oil2 jars canned tomatoes (preferably home canned)salt & white pepper to taste
Directions
Cut potatoes into stock pot with water, & boil with salt until cooked through. Mash in pot. Meanwhile, saute leeks in olive oil. Add to potatoes. Add canned tomatoes. Cook an additional 30 minutes on med-low temperature, seasoned with additional salt and white pepper. Serve warm.
