Primal Stuffed Peppers Low Carb Paleo

1/2 pound 93% Ground Beef1/2 Pound Italian Mild Sausage 2 Yellow Peppers- Tops removed and diced2 Orange Peppers -Tops removed and diced2 Green Peppers- Tops Removed and Diced1/2 medium yellow onion diced 4 tsp diced garlic1/2 c drained diced tomatoes w/o added salt1 small can sliced mushrooms, drained6 oz cheddar cheese, or other favorite cheese, or none at all!
Turn on oven to 350F. Prepare a glass baking dish with a little coconut or olive oil.
Remove the top of each pepper, discard membranes and seeds. Dice the tops to be used later.
Brown Sausage and ground beef in a large skillet. Drain and keep on the side. Add diced pepper tops, onion, garlic, tomatoes and mushrooms and saute until peppers are crisp tender.
Add Meat mixture back into pan and heat through. Scoop equal amounts into each pepper. Bake for about 25 min, then put slices of cheese to melt.
Serving Size: Makes 6 Stuffed Peppers

Terrible. I added carrots and celery (not to mention salt @ pepper) yet these were still boring. I should have covered the peppers before putting them in the oven, but the directions didn't say so. Result: Peppers themselves were under-cooked, Do not waste time (and money) on this recipe. - 11/5/15
