Sweet Curry Tuna Salad

Ingredients
1/3 c light mayonnaise1.5 tablespoons sugar1/2 tsp curry powder2 6-oz cans tuna, drained1 8-oz can sliced waterchestnuts, coarsely chopped1/2 c matchstick carrots1/2 c thinly sliced celery1/2 c chopped red bell pepper
Directions
Combine first 3 ingredients in a medium bowl. Stir well. Stir in tuna, waterchestnuts, carrots, celery, and red pepper.

Makes 4 3/4-cup servings. Serve on lettuce or as a sandwich (not included in nutrition).
