Lemon Risotto with PEas

Ingredients
4 cups of vegetable broth .5 cups of fresh lemon juice1.5 cups of arborio rice2 tbsp olive oil2/3 cups frozen peas2 scallions chopped
Directions
Simmer the broth and the lemon juice together.

Heat the oil, coat the scallions and rice in the oil. Then, start to add the simmered broth .5 cups at a time, stirring until the broth dissolves. Repeat the process until all the broth/juice is gone, about 35 minutes. 10 minutes before completion stir in the peas.
