Twice Baked Potato Cups

Ingredients
2 large baking potatoes¼ cup Parmesan cheese¼ cup sour cream¼ cup milk 1/8 tsp. salt1/8 tsp. pepper
Directions
1) Boil potatoes in water until fork-tender
2) Drain water. Let potatoes cool enough to handle.
3) Slice each potato in half, scoop out pulp and put into mixer.
4) Cut a thin slice off bottom of each potato cup and place in muffin pan.
5) Add sour cream, milk, cheese, salt, and pepper to blender. Blend.
6) Spoon mixture into potato cups.
7) Bake at 400 for 25-30 minutes or until heated through and golden brown.
8) Garnish as desired (sliced green onions, crumbled bacon, parmesan cheese, etc.)
