Stir Fry Stuffed Baked Potato

Ingredients
1 baking potato1/2 cup frozen stir fry veggies2 sprays of spray butter2 tbsp grated Parmesan cheese1 tbsp garlic butter fat free croutons, crushed
Directions
Scrub potato; pierce several times; spray butter all over. Set on plate microwave on high 5 to 7 minutes turning over half way through.
Meanwhile, cook veggies in small sauce pan spray with butter and season to taste.
Cut potato in half length wise put veggies on top.
Sprinkle Parmesan and top with crushed croutons.

    Frozen veggies with beans sautéed with olive oil, red wine, garlic, paprika, s&p, celery salt, parsley and diced dried onions. The veggies were so yummy I only needed a little shredded cheese and no butter. Can't wait for the leftovers! - 8/1/11

    I do this all the time -- however, I bake it in the microwave for 7 minutes and then in the oven for 8-10 minutes. It tastes more like a backed potato, rather than a micro'd one. I sometimes eat it with just cottage cheese and canned tomatoes or this and add fresh veggies. Always filling and great! - 11/25/08

    Sounds great, of course if you're overly health concious making it in the oven and adding fresh veggies saute'd to the recipe in place of the frozen would come out pretty much the same, just bake it for 50 min at 400 degrees. It's a good recipe. - 11/25/08
