Emeril Lagasse's Ranchero Sauce

1 Tbsp vegetable oil1 Cup chopped white onions1/2 C. chopped Red Bell Pepper1/2 C. chopped Green Bell Pepper1 tsp Cumin1/2 tsp Salt1/4 tsp Cayenne1 Tbsp minced Jalapeno1 tsp minced Garlic1 C. chopped Tomatoes in their juice1 C. Chicken Stock3 Tbsp chopped Cilantro
In a medium pot, heat the oil over medium-high heat. Add the onions and bell peppers, and cook, stirring, for 3 to 5 minutes. Add the cumin, salt, cayenne, jalapeno, and garlic, and cook, stirring, for 30 seconds. Add the tomatoes and their juices and cook, stirring, for 2 minutes. Add the stock and simmer until thickened, about 15 minutes. Remove from the heat and add the cilantro. Adjust the seasoning to taste.
