Tofu Cheesecake (delicious)

Ingredients

1 TB Emes Gelatin or other vegan gelatin1/2 Cup hot water2 graham cracker crusts1 box Mori Nu Extra Firm Tofu1/2 - 3/4 Cup sugar1 Cup (1/2 container) IMO alternative sour cream3 tablespoons 100% lemon juice1tsp vanilla1 pinch salt1tablespoon soy milk
Mix together 1 TB gelatin with 1/2 cup hot water and let sit five minutes.
In a blender add gelatin/water mixture with one box extra firm Mori Nu tofu. Blend until fluffy.
Add sugar,IMO,Lemon Juice,vanilla, salt, and soy milk.
Blend until smooth then pour into two graham cracker crusts. Bake for twenty minutes @ 350.
Let stand uncovered in refrigerator over night.
Top with fruit or pie filling of your choice!
