Broccoli Cheddar Soup

6 Tbsp butter2 c onion1 tsp salt1/2 tsp black pepper2 cloves garlic1 tsp thyme6 tbsp flour6 c chicken stock32 oz broccoli1 c heavy whipping cream2 1/2 c sharp cheddar cheese2 tbsp butter
In a medium pot melt 6 tbsp of butter over medium heat. Add onions, salt, pepper, cook stirring approx. 3 min. Add garlic and thyme cook until fragrant. Add flour stir until well mixed. Slowly add chicken stock, whisking constantly, bring to a boil. Reduce heat and simmer until thickened. (approx. 5 min) Add broccoli and cook until tender (approx. 10 min) Add cream and heat to bare simmer. Add cheese and cook over low heat, stirring until melted. Add remaining 2 tbsp. butter and stir. Soup can be frozen for future use.
