Cheddar Potato Soup

Ingredients
6 medium potatoes, diced1 medium onion, chopped3 stalks celery, chopped1/2 c. margarine or light butter 4 c. milk 2 %salt & pepper to taste2 Tbsp chicken bouillion8 oz cheddar cheese, light1 Tbsp corn starch1/2 c milk 2 %
Directions
Boil potatoes & carrot for 10-15 min. While boiling, saute onion & celery in margarine for 10 minutes. Drain water in potatoes to only 2 c and add 4 c milk. Add onion & celery, cheese. Mix 1/2 c milk & cornstarch and add to mixture, boil for 5 minutes.
