Clean Eating Black Bean & Edamame Salad

Ingredients
1 15 oz. can unsalted black beans, drained & rinsed1 cup grape tomatoes, halved1 cup shelled edamame, thawed1/2 cup chopped fresh cilantro2 oz. fresh mozzarella, cut into 1/4 inch cubes1/2 cup diced red oniondressing:1 1/2 tbsp extra virgin olive oil2 cloves garlic, minced2 tbsp fresh lime juice2 tbsp apple cider vinegar1/2 tsp sea salt1/4 tsp fresh ground black pepper
Directions
In a medium bowl, combine beans, tomatoes, edamame, Anaheim pepper, cilantro, mozzarella and onion. In a small bowl, whisk dressing ingredients until combined. Drizzle over top of bean mixture and toss to combine. Serve immediately.
