Southwest Chicken Chili

1 tbsp olive oil1 lb boneless, skinless chicken breast, cubed1/4 chopped onion1 cup chicken broth1 4oz can chopped green chiles1 15oz can white beans, undrained2 green onions, slicedSpice Blend:1 tsp garlic powder1 tsp ground cumin1 tsp oregano1/2 tsp cilantro1/8 tsp red/cayenne pepper
1. Heat oil in pan over medium heat. Add chicken cubes and onions. Cook 4-5 minutes.
2. Stir in broth, chiles and spice blend. Simmer 15 minutes.
3. Stir in beans (liquid also). Simmer 5 minutes.
4. Top with green onions.
Top with monteray cheese, if desired. (Cheese not included in nutritional information.)
