Curried Coconut Tilapia

Ingredients
4 - 4oz tilapia filets1 can or 1 cup coconut milk(it should only have 3 ingredients)6 whole almonds1 very small white onion, chopped1 tsp ground ginger or 1 tbsp fresh chopped ginger1/2 tsp ground turmeric1 tsp dried chives or 4 tbsp fresh chopped chivessea saltpepper
Directions
add the watery top portion of the coconut milk to a blender, add the almods and liquify completely. Add the chopped onions and purify, then add the turmeric and ginger and purify. Add the solids from the coconut milk and blend until bubbly. Set the sauce aside for awhile to wake the flavors up.

Rinse the tilapia filets with water and dry thoroughly. Then coat in sea salt and pepper. Place the filets in a sauce pan with tall sides and pour the coconut sauce over them to cover, and sprinkle the chives over the top. Bring to a gentle boil and then reduce to heat to very very low and cover and simmer for 30 minutes.

Serve over rice or mashed potatoes and enjoy :)
