Chicken Italian Sausage, Spinach, & Mushroom Spaghetti Sauce

Ingredients
1 lb chicken Italian sausage, remove casings1/2 large onion, chopped 1 clove chopped garlic 16 ounces sliced mushrooms 1 T oregano1 T basil1 T thymesalt & pepper, to taste1 teaspoon red pepper flakes 1 cup red wine 16 ounce package frozen chopped spinach 28 ounce can tomato sauce 14.5 ounce can diced tomatoes, drained
Directions
Brown sausage, onion, and garlic until browned.
Add mushrooms and spices, and cook 5 minutes.
Add wine and simmer 2 minutes
Add spinach and tomatoes and simmer 5-10 minutes.

The longer it cooks the better it gets. Servings were measured after a lot of the liquid had reduced. Makes a huge batch and freezes well for later.
