Smashed Parmesan Potatoes

Ingredients
1-1.5 lb red skinned potatoes1/4 cup extra virgin olive oil1/4 cup freshly grated parmesan cheesesalt and pepper to taste
Directions
Place the potatoes in a large stockpot and cover by at least 2 inches of cold water. Cover and bring to a boil. Continue to boil until potatoes are tender, about 15 minutes. Drain, reserving 3/4 cup of the cooking liquid. Return the potatoes to the pot and coursely mash with a fork, adding just enough of the cooking liquid to moisten. Stir in the cheese and the olive oil. Season to taste with salt and pepper.
