Coconut Curry Shrimp with Bulgur

Ingredients
1 Tbsp Olive oil1/2 chopped white onion1 red pepper, chopped1 clove garlic, minced1 tsp ground cumin and coriander1/2 tsp curry powder1 cup unsweetened coconut milk1/4 tsp crushed red pepper flakes1 pound raw shrimp2 cups cooked bulgur
Directions
Heat oil in a pan, add onion, pepper and garlic and cook fore 3 minutes. Add the powders and cook for one minute. Add milk and crushed pepper flakes, bring to a boil and cook for 2 minutes. Add shrimp and cook for 6 minutes. Serve over bulgur. makes 4 servings.
