Low Fat Zucchini Muffins

Ingredients
Zucchini, 1 1/2 cup, shreddedEgg, fresh, 2 largeApplesauce, unsweetened 2/3 c.Brown Sugar, 1/2 cupGranulated Sugar, 1/2 cup*Flour, white, 1 cup*Wheat flour, 1 cup (or use all white)Cinnamon, ground, 3 tspCloves, ground, 1/8 tspVanilla Extract, 2 tspBaking Powder 2 tspSalt, 1 tsp
Directions
Mix the sugar, eggs, vanilla and applesauce until smooth.Add the zucchini and stir. Add the cloves, nutmeg and cinnamon and mix to combine. Add the Baking soda and salt to the flour and then mix the dry into the wet.
Scoop by 1 oz. scoops into greased muffin pans (I use Pam) and bake at 425 degrees for 10 to 14 min (until just brown on top) It will make exactly 24 1 oz. muffins.
