Chili Pinto Beans

2 cups dried pinto beans1 cup chopped onions3 cloves of garlic, minced6 cups vegetable broth8 oz. tomato sauce1/2 cup salsa (Pace medium)1/4 cup Molasses1/4 teaspoon liquid smoke1/4 teaspoon ground ginger1/2 tablespoon cumin seeds, ground1 tablespoon chili powderUnrefined sea salt and fresh ground black pepper to taste.
soak pinto beans over night, or quick-soak in 6 cups water by bringing to a boil for two minutes, remove from heat and let soak for 3 hours. Add water to cover beans if necessary.
Drain and rinse beans, set aside.
In a Dutch oven with the burner at medium high heat, add the olive oil and onions, saute for 3-5 minutes. Add garlic and saute for additional 3-5 minutes.
Add tomato sauce, salsa, vegetable broth. Stir it up and add the rest of the ingredients and bring to boil.
Remove from heat, cover.
Into the oven at 250 for 4 hours.
