1/2 large cucumber, peeled1 tablespoon dried dill (or 2 tablespoons fresh dill)1 teaspoon fresh garlic, minced1/2 teaspoon fresh ground black pepper1/2 teaspoon salt8oz fat-free plain Greek yogurtJuice from half a small lemon
Chop cucumber into a small dice, as small as you'd like. (I like mine chunky.) Throw it into a bowl. Add minced garlic, dill, salt, and pepper. Stir to combine. Add yogurt to bowl and stir to combine once more. Stir in juice from the lemon. Tastes best if you let sit for a few hours for the flavors to marry. Enjoy!
