Quick Seafood Bisque for the Vitamix

Ingredients
1 8-oz can evaporated milk1 1/2 cups chicken stock1/3 cup Half and Half cream1/2 onion, chopped2 cloves garlic, minced2 tbsp. tomato paste5 oz. raw shrimp, tails removed1 5 oz. can fancy crab meat1/2 tsp. Old Bay1/2 tsp. black pepper
Directions
Place the milk, stock, cream, and tomato paste in the Vitamix and blend until just mixed.

Saute the onions and garlic in a skillet over medium heat for 5 minutes or until soft. Add to the Vitamix, along with the Old Bay and Pepper, and blend on High until steaming.

Meanwhile, cut up the shrimp into small pieces. Place in the skillet and cook, stirring often, until almost opaque. Add the canned crabmeat to the shrimp and continue to cook until the shrimp are completely opaque and hot.

When the milk mixture in the Vitamix is nice and hot, turn off the blend and add half of the seafood. Turn the blender to Variable 4 and blend for 10 seconds.

Divide the remaining seafood into four bowls and top with the hot soup. Stir and sprinkle on a little extra Old Bay.
