Chicken Enchiladas for a Crowd

23 pounds cooked, diced chicken breast3 cups salsa1.5 cups enchilada sauce23 nine inch flour tortillas18 cups part skim mozzarella cheese
Heat up chicken in water, drain. Mix salsa, enchilada sauce and chicken together and heat it up in a skillet.
Put a layer of flour tortillas in bottom of pan. Top with chicken mixture. Then top with another layer of tortillas and top with cheese.
Makes 6--18 X 24 inch pans.
Bake at 350 degrees for 20 to 25 mnutes or until cheese is melted and bubbly.
Each serving approx. a 2 1/2 - 3 inch square.
