Carrot Orange Cranberry Muffins

1 cup ap flour1 cup whole wheat flour2 tsp baking soda1/4 tsp salt2 cups shredded carrot1/2 cup dried cranberries1/2 cup sliced almonds1/2 cup unsweetened flaked coconut1 pear cored shredded (skin on)4 egg whites (lrg)1 egg (lrg)1/2 cup unsweetened applesauce1/2 cup pear sauce (trader joe's)1/2 cup sugarZest & Juice of 1 orange
Preheat oven 350, pan spray or line 12 muffin cups.
In large bowl mix together dry.
Add carrots, pear, cranberries, nuts, and coconut to dry ingredients. Mix to coat.
In small bowl whisk together egg whites, and egg . Add in applesauce, sugar, and orange zest & juice and stir.
Add liquid to dry/fruit mixture and stir til just moistened. Scoop into muffin pan.
Set pan in middle of oven and bake 20 mins, check doneness with toothpick. (if inserted into center and comes out clean its done) if not done keep checking at 5 min intervals
