Lemony Chicken Soup with Shirataki Noodles

1 SB chicken breast cooked and shredded or diced4 cups of homemade chicken stock2 cups of *water1/2 of a medium onion diced1 cup celery sliced3 carrots peeled and sliced1/2 cup spinach (optional)1/2 lemon (seeds removed)1 pkg **Shirataki tofu noodles2 T fresh parsley (optional) finely chopped or 2 t dried1 cup mushrooms sliced1 clove of garlic crushed1 bay leaf (optional)salt and pepper to taste
Prep vegetables and soften onion, carrots, mushrooms and celery in soup pot with 1 1/2 tsp olive oil (seasoning the vegetables now will add depth to the flavor of the soup and promote the softening without a lot of oil). Add stock and water to pan. Take lemon and squeeze in pot. Throw the lemon rind, bay leaf and garlic in and simmer for 15 minutes. (While the soup is simmering prep the Shirataki noodles according to the package directions.) Add chicken and spinach and simmer 2 minutes then add the noodles and simmer 2 minutes more. Salt and pepper to taste and remove from heat. Remove bay leaf and lemon rind. Add fresh parsley and enjoy.
