Pumpkin Bread Pudding in the microwave

2 tbsp pumpkin puree 1 tbsp unsweetened vanilla almond breeze1 slice light whole-wheat, high-fiber bread, such as Orowheat1/4 cup liquid egg whites1/8 tsp pumpkin pie spice1/8 tsp cinnamon1/4 tsp vanilla extract1 packet stevia (to sprinkle on top)
Combine pumpkin, almond milk, egg whites, spices and vanilla and mix very well.
Meanwhile, toast bread.
Spray a large microwavable mug with cooking spray (lightly), and break up piece of toast into small pieces into the mug.
Pour pumpkin mixture over the bread and stir to coat.
Microwave for 2.5 minutes (or until pudding is thoroughly set). ENJOY!
Serving Size: makes 1 serving
