Curried Chicken Salad

* Yogurt, plain, fat free, 1 cup (8 fl oz) * Mayonnaise, regular , 2 tbsp * Mayo Light Mayonnaise (Mayo), 2 tbsp * Curry powder, 6 tbsp or to taste* Lime Juice, 1 lime yields* Scallions, raw, 8 medium * Red bell pepper, 1 medium chopped* Ginger Root, 4 tsp grated* Splenda, 6 tsp or to taste* Pepper, red or cayenne, 1 tbsp or to taste* Granny Smith Apples, fresh, 2 medium * Mangos, 2 ripe fruit without refuse* Boneless Skinless Chicken Breast - 18 oz cooked and cubed* Boneless Skinless Chicken Thighs - 18 oz cooked and cubed* Cashew nuts, lightly toasted, 1/2 cup
Mix yogurt, mayonnaise, curry powder, lime juice, scallions, red bell pepper, ginger root, splenda, and cayenne pepper in a large salad bowl. Dice granny smith apples, add to bowl, and mix well. Dice mangos, add to bowl, and mix well. Add cubed chicken breast and thighs to bowl and mix well. Lightly toast cashew nuts under broiler and add to bowl, stir well.
Chill in refrigerator for at least 3 hours.
Serve on a bed of lettuce, or in a whole grain wrap or pita. Makes 8-10 3/4 - 1 cup servings
Optional - Top with fresh cilantro
