Garlic Lime Marinated Pork Tenderloin1 small or 11/2 lb pork tenderloins3/4 cup fresh lime juice1/4 cup olive oil2 tsp ground pepper1 tsp salt1 tsp cumin1/2 tsp cayenne pepper4 Tbsp honey3 Tbsp dijon mustard2 tsp fresh garlic, minced2 tsp lime peel, grated
Whisk all marinade ingredients together. Set aside ½ of marinade and in a small saucepan bring to a boil, reduce heat and simmer as pork is cooking. Pierce pork with a fork. Combine remaining marinade and pork tenderloins in a large plastic bag. Let marinate at least 30 minutes. Coat grill with cooking spray; preheat. Put the tenderloins on the grill; turning occasionally (be careful not to char pork). Roast until meat thermometer reaches at least 160 degrees. Remove and cover with foil and let stand for 10 minutes. Serve sliced tenderloin with heated marinade.
