Quinoa Parsley Tabouleh

Ingredients
Quinoa, 1 cup cookedGarlic, 1 tsp fresh or from a jarOlive Oil, 1/4 cup Lemon Juice from one large lemonChopped Parsley, 1 cup freshRed Onion, 1/4 C choppedLite Salt, 1/2 tsp 2-3 Roma tomatoes, choppedRed bell pepper, chopped, 1/8 CPepper to taste
Directions
Cook quinoa and allow to cool. Mix parsley, tomatoes, onion, red pepper together in large bowl. Mix olive oil and lemon juice together, add salt and pepper. Mix into dry ingredients and allow mixture to set at room temperature for 30 minutes.

Serve on lettuce roll up or grape leaf or as a side salad or dip.

Serving Size: Makes 8 1/2 C servings or use as a dip or wrap in tortilla
