Crock Pot Garlic Lime Chicken

Ingredients
4 chicken breasts (i use frozen) juice from 2 limes2 garlic cloves, minced1 1/2 cups low sodium chicken broth 2 tablespoons light margarine spread 1 cup uncooked instant rice 1/2 tsp. black pepper1/2 tbsp dried thyme if desired
Directions
Place chicken breasts in crock pot
Squeeze juice from 2 limes (approx 1/4 cup) and drizzle over chicken
Mince the garlic and add to crock pot
Pour chicken broth in
Add butter, black pepper, and if desired, 1/2 tbsp dried thyme
Cover and cook on low heat 8-10 hours
Add rice and cook additional 15 minutes

Serve chicken over rice. A side salad complements well!

    Extremely bland. I even added extra garlic and extra lime plus lime zest. I'm not sure what could be done to make this taste better. Also, I ended up with a lot more liquid than I expected. I had to use a slotted spoon to get the rice out. Bummed...it sounded great. - 1/19/12
