Baked Egg in Spicy Tomato Sauce

3 Tbls grated carrot6 Tbls chopped red oniondiced jalepeno to taste1.5 tsp olive oil1 14.5 oz can diced tomatoes3 extra large eggs3 oz low fat cheddar, grated
Preheat oven to 375 degrees.
Chop vegetables.
Heat oil in oven proof pan.
Add carrots, onions and jalepeno and cook a few minutes.
Add tomatoes to pan and simmer about 5 minutes to incorporate flavors.
Make 3 holes in the tomato mixture and crack one egg into each hole.
Sprinkle top with cheese.
Place in an oven for 5 minutes for runny yolks or onger as desired. Not more than 10 minutes.
Serve with toast points.
