Indian Pudding

2/3 cup cornmeal4 cups skim milk1/3 cup Stevia1/4 cup molasses2 large eggs2 T unsweetened applesauce1 tsp ground cinnamon1/2 tsp ground ginger1/8 tsp ground nutmeg1 tsp vanilla
Preheat over to 325 degrees
Pour cornmeal into a large saucepan and very gradually add milk, stirring constantly to avoid clumps. Continue stirring and bring to a boil over medium-high heat, then reduce the heat to low and simmer for about 5 minutes (still stirring)
Remove from heat and add all of the remaining ingredients
Spray a 2QT baking dish with non-stick cooking spray then pour the pudding into the dish
Bake in the oven in a water bath for about 1 hour and 10 minutes. The center should be firm, but quivery and a dark crust should be formed.
