Tofu, extra firm, 250 grams Green Peppers (bell peppers), 1 cup, strips Onions, raw, 1 cup, chopped Red Ripe Tomatoes, 1 cup, chopped or sliced *Cumin seed, 1 tsp *Coriander seed, 1 tbsp Olive Oil, 2 1tsp Cilantro, raw, 4 tbsp
Freeze the tofu and thaw it. Then squeeze the water out , then crumble it with your fingers.
Heat oil in a nonstick pan and add cumin seeds. When they start popping add onions and saute them until soft and little brown on the sides. Add green bell peppers and cook until soft. Add chili flakes, salt and coriander powder and stri to mix. Add tomato and cook until soft. Add crumbled tofu mix well and cover and cook on low heat for about 5 minutes.
Sprinkle cilantro and serve
