Quinoa pudding

Ingredients
1/4 cup quinoa1 and 1/4 cup milk, divided1 egg, beaten1-2 Tbsp.maple syrupcinnamon, nutmeg, vanilla2/3 cup blueberries1/4 cup toasted almonds
Directions
Cook quinoa with 2/3 cup milk until soft. Mix together remaining milk, egg, vanilla and add to quinoa. Cook until thick and add cinnamon and nutmeg. Cool to room temperature and top with blueberries and almonds.
