Easy Tzatziki

Ingredients
1 c. Greek Yogurt, plain 0%1 Persian Cucumber w/peel, grated1 Garlic Clove, pressed OR 1/8 t. granules2 t. EVOO1 t. Red Wine Vinegar (any, except Balsamic?)1/4 t. Dried Dill Weed (more or less to taste)1/4 t. Salt, to taste
Directions
Wash cucumber. Combine all ingredients in a bowl with a lid. Can be eaten immediately, but better if chilled to let ingredients marry.

Serve with toasted whole wheat flat bread. A nice accompaniment to meat as well.
