Honey Cake

Ingredients
225g wholemeal flour1 tsp mixed spices0.5 tsp nutmeg1tsp bicarbonate of soda200g honey50g buttergrated zest and juice of one lemon2 eggs2 tbsp milk
Directions
-Preheat oven to Gas Mark 3/160C/325 F

-Stir Flour, soda and spices in a large bowl

-Over a low heat, melt butter, lemon zest and Honey together.

-Make a well in centre of flour and gradually pour in honey and butter, mixing until well combined

-Beat eggs and milk together and slowly beat into cake mix.

-Pour into cake pan and bake for 40-45 minutes.
