Sweet Potato Peanut Stew

1 onion1 bell pepper1 jalapeno4 cloves garlic2 Tbsp olive oil1 Tbsp fresh ginger1 T chili powder1 tsp cumin1/2 tsp red pepper flakesabout 2 lb sweet potatoes1 can tomato paste12 oz ground beef2 small zucchini1/2 c peanut butter
Saute onion and peppers in olive oil. Add garlic and ginger, saute for 2 minutes.
Meanwhile, brown the ground beef and drain.
Add the spices and tomato to the pepper/onion mixture.
Add the sweet potato, diced into 1/2" chunks. Add water to cover the vegetables. Simmer 45 minutes.
After simmering, scoop out about 1/2 c of the juice and mix with the peanut butter.
Add the peanut butter, beef and zucchini to the stew and simmer until warmed through.
Serving Size: makes 6 servings
