Apple Quinoa Pudding

Ingredients
1/2 C quinoa, well-rinsed1 C 1% milk, divided in half1/4 t salt1 large Gala apple or other firm sweet-tart1 pat butter (salted)1/2 t cinnamon1/4 t nutmeg1/2 t vanilla extract1 t honey
Directions
In a small saucepan, combine quinoa, 1/2 cup milk, 1/2 cup water and salt. Bring to a boil, reduce to summer, cover and cook for 15-20 minutes until soft. Turn off heat and let sit, covered for 10 more minutes.

Peel, core and cut apple into a small dice. Melt butter in a saucepan and cook apples until soft. Add quinoa and spices to apples. Thin with remaining milk whenever you serve it (if made ahead, use 2T per serving when reheating). Sweeten with honey.
