low Carb Egg Cassarole

Ingredients
18 eggs13 oz cheddar cheese15-30 black olives (or green)5 tbs chive you can use green onion1.5-2 cups sliced mushrooms2 cups canned dices tomatoes 2 tbs of heavy cream
Directions
1. preheat oven to 350 degrees
2. whip eggs and heavy cream togehter
3. fold in all other ingredients leaving 1-2 oz of cheese out
4. pour into a 8x12 cassarole dish lightly sprayed or buttered
5. bake for 30-45 minutes
6. spread the remaining cheese on top and let melt

Serving Size: makes 10 medium servings or 15 small servings
