Ingredients
3 medium tomatoes, peeled and chopped1/2 cup cucumber, seeded and chopped1/2 cup green pepper, chopped2 green onions, sliced2 cups low-sodium vegetable juice cocktail1 tablespoon lemon juice1/2 teaspoon basil, dried1/4 teaspoon hot pepper sauce1 clove garlic, minced
Directions
1. In a large mixing bowl, combine all ingredients.
2. Cover and chill in the refrigerator for several hours.

Yield: 4 servings

    Made this today with my immersion blender. Added fresh jalapeņo and lots of pepper for more heat. Love that it is all fresh tomato and no canned. The lemon juice added the brightness without salt. Had a serving right away because it smelled so good but know it will taste better when chilled. Great! - 8/22/15
