Hearty Beef & Mushroom Soup

1/2 pound lean beef, cut small6 C or so water, more may be needed1 tsp Braggs Liquid Aminos (can substitute soy sauce, but multiply the sodium by 4)2 cloves garlic minced1 C chopped green onions1/2 C uncooked wild rice2 C fresh mushrooms, sliced1 13oz can evaporated milk (can use lowfat or skim, but will not be as creamy tasting)1 oz cooking sherrysalt and pepper to taste
In large pan place beef and cover with water. Parboil about 10 minutes. Add rice, aminos (or soy sauce), and garlic, reduce temperature to medium. Simmer for about 45 minutes to 1 hour, or until rice is tender and slightly curly. You may need to add water now and then, you want the soup to be rather watery. Add mushrooms and onions, and milk, cook another 10 minutes until tender, adding water if needed to keep a good soup base, it isn't a stew after all! Add Sherry last, cook 5 more minutes, and serve.
