Cheesey Rice Casserole

Ingredients
2 cups vegetable stock or chicken stock3/4 cup long-grain brown rice1 cup light sour cream1 cup cottage cheeseSalt and freshly ground black pepper
Directions
* In a large saucepan, bring stock to a boil. Add rice. Cover and cook on low heat for 20 minutes or until rice is tender and liquid is absorbed. Let stand for 5 minutes.

* Combine rice, sour cream, cottage cheese, salt and pepper. Spoon into prepared casserole. Bake in preheated oven, uncovered, for 20 minutes or until heated.
