Tempeh Tacos

Ingredients
• 2 tablespoons of olive oil, or less if you want• 8 oz. tempeh, cut into 1-inch cubes• 1 medium-sized onion, chopped• 4 cloves of garlic, minced• 1 jalapeno or serrano pepper, minced (I’ve also used one of those 4oz cans of diced chilies and that works too, but I like the fresh pepper better.)• 1 can of black beans, drained and rinsed• 1 cup of frozen corn, thawed a bit in the microwave• 3 teaspoons of chili powder• 1 teaspoon of cumin• ½ teaspoon of cayenne pepper (optional)• 1 tablespoon of soy sauce• Salt and pepper to tasteToppings/vessel:• Tortillas• Salsa• Lettuce (optional)• Cilantro (optional)
