Ham Bone, Cabbage and Rotel Soup

Ingredients
1 ham bone with meat but very little fat1 lb. ham, scraps, lean1 can Rotel tomatoes with chilies1/2 head med. cabbage, cut into 3 sections2 T. ham seasoning
Directions
1. In a large pot containing 3 qts of water, simmer ham bone for at least 1˝ hour, covered.
2. Add ham seasoning and Rotel tomatoes. Simmer at least ˝ hour more.
3. Cut cabbage and add it to soup about ˝ to 1 hr before serving, depending on how crisp you want cabbage to be.
4. Adjust ham seasoning (add more seasoning or add water). Skim off fat. Serve hot.


Serving Size: Makes 6 servings of about 1 cup each.
