Southwest Shrimp Salad with Cilantro Lime Vinaigrette

Ingredients
SHRIMP & MARINADE:1 lb. uncooked large shrimp, peeled and deveined1 small garlic clove, minced (I use 1 T... we like garlic!)1/2 t. chili powder1/4 t. ground cumin1/4 t. salt2 t. olive oilCILANTRO VINAIGRETTE:1/3 c. olive oil1/3 c. fresh squeezed lime juice1/4 c. cilantro1-1/2 t. sugar1 small garlic clove, minced (yep... we use 1 T here too!)1/2 t. salt1/4 t. pepper
Directions
Put ingredients for cilantro vinaigrette in the blender and blend until liquid. Pour into a small jar or container and refrigerate. Can be made earlier in the day

Combine salad greens and vegetables in 4 bowls. Slice avocado on top. Cook shrimp and spices in olive oil until the shrimp is pink/opaque (about 3-4 minutes each side). Top greens with shrimp and drizzle with dressing. Enjoy!
